TECHNIQUES

1. Broiling is a delicious and easy way to cook meat, fish, or vegetables in the oven.  The food is placed on a boiler pan, which comes with most ovens, and the pan goes as close as possible to the heat source.  The food, then, sears quickly and retains its moisture. I like to cover the whole broiling pan with heavy foil. Then I form a rectangle basket out of foil, which will hold the food, and place the basket on the broiler pan.  This system makes cleaning up easy and quick.  Or simply line a cookie sheet with foil and broil as close to the heat source as possible.
